Nigerian Red tomatoes stew Recipe

Nigerian tomato stew is one of the most popular Nigerian food,  it is easy to make with basic ingredients like Tomatoes and chilli peppers.
It is mostly eaten alongside white boiled rice and sometimes yam, potatoes, bread.....
INGREDIENTS
° 35 medium  sized tomato balls.
° 5 medium sized chilli pepper fingers ( Shombo)
° 5 medium sized scotch bonnets( Ata rodo)
° 5 medium sized red bell peppers( Tatashe)
° 4 medium sized onions
° 2 1/2 tbsps Curry powder seasoning
° 1 1/2 tbsps dry tyme seasoning
° 6 seasoning cubes ( preferably maggi)
° Salt to taste
° 1/2 Cup to 1 Cup of vegetable oil.
° Stock ( Chicken, fish, beef....)
° Cooked and Fried Chicken, beef, turkey, fish.......
SERVING: 12 - 15 Dishes
TOTAL TIME: 1 hrs 30mins to 1 hr 35mins
PREP: 50 minutes.
COOKING: 40 - 45 minutes
DIRECTION:
1. Wash and Chop tomato balls, chilli pepper fingers ( Shombo), scotch bonnets( Ata rodo), red bell peppers( Tatashe) and 2 medium sized Onions,  Add water Then blend them all to a paste/puree with the use of a blender/industrial grinder.(Try blending small quantities at a time so that the mixture blends properly and so you don’t overwork your blender).
2. Pour blended tomato mix puree into a medium size pot and cook. to reduce excess water used in blending the tomato mix(This can also be achieved by just sieving the tomato blend and draining out the water)
3. In another pot, Cook beef/Chicken/Turkey With seasoning, salt and one ball of onion.
Once the beef/Chicken is properly Cooked,  take it down from the stove and drain out the beef stock.
Pour the beef/Chicken stock into the boiling Tomato puree and fry the beef/Chicken with frying pan and vegetable oil.
When all the beef/chicken has been fried, take them all out,  transfer them onto a drainer/ plate and dice the last onion in another plate.
Sprinkle the diced onion in the hot vegetable oil,  take the pan down from the stove,  stair the onion- oil mixture a bit and pour the content into the boiling Tomato stew.
4. Add Salt,  seasoning cubes,  curry seasoning powder and dried tyme seasoning into the boiling Tomato stew,  stir with a cooking spoon and leave to cook for about 5  -10 minutes
5. Finally Add the fried beef/Chicken Into the stew and cook for about 2 to 3 minutes more before taking the pot of Tomato stew down from the stove or cooker.
Serve Tomato stew alongside Boiled white rice, yam.... And use the chicken/beef to garnish the food for a more attractive look.
