How to bake soft and fluffy cakes

Have you ever wondered how those soft and fluffy cakes you eat at a birthday  party or other events are baked?
Well it is very easy, all it takes is the right measurement of ingredients.
And also If you have never baked a cake from scratch you may be surprised at how simple it is, and that you probably have all of the ingredients in your pantry and fridge.
INGREDIENTS
°  2 cups (250g) all purpose flour.
° 1 cup ( 125g)  sugar.
° 1/4 tsp nutmeg.
° 4 egg whites.
° 11/2 tsp vanilla extract.
° 2 tsp baking powder.
° 1 cup of milk.
° 1/4 tsp baking soda.
° 2 cups of butter ( 250g).

TOTAL TIME: 50 minutes
PREP:20 minutes
COOKING: 30 minutes

DIRECTION
1. Preheat the oven to 178°C[350°F]
2. Line the baking pan/pans with parchment paper( in the absence  of a parchment paper,  use flour and butter to grease the pan/pans)
3. Beat the butter and sugar in a large bowl with your mixer on a medium speed for about 5 - 10 minutes until light and fluffy. Scrap the sides of the bowl so that butter at the sides can mix well too
4. Add the egg white and vanilla extract into the batter and mix for about a minute,  the texture of the batter will change and become  thicker.  Then set aside.
5. Combine flour, baking soda,  baking powder and nutmeg in a medium sized bowl( sieve all dry ingredients to get rid of lumps and dirt).
6. Add about one-third of the flour mixture to the batter and beat on medium speed until incorporated
7.Add about half of the milk and beat on medium speed until incorporated.
8. Continue alternating adding  the wet and dry ingredients into the batter until the bowls are empty. Mix very well until the ingredients  are properly incorporated.
9. Pour the batter into the cake pan/pans and place in the preheated oven to bake for 30-33 minutes or until a toothpick inserted in the centre of the cake comes out clean.
10. Remove cake from oven and allow to cool for 5 minutes( don't  be alarmed if the top of the cake is a bit brown,  it is normal)
11. Remove cakes from pans to cooling racks to cool completely before frosting .

NOTE: Never frost a warm cake,  if the cake is even a bit warm,  the frost will melt.
