NIGERIAN EGUSI SOUP RECIPE.
The Nigerian Egusi soup is an appetizing dish made from melon seeds.
It is also one of the most popular soup in Nigeria.
It can be eaten with : fufu/eba(cassava ) /pounded yam.

INGREDIENTS
° 4 cups of Egusi(melon) seeds( grinded).
° 1/2 cup of palm oil( red oil).
° beef.
° Fish:Stock fish and dry fish.
° 3 seasoning cubes.
° 11/2 tbsps of salt.
° 11/2 tbsps of powdered pepper( black pepper is preferable).
° 3 tbsps of grinded crayfish.
° Vegetables( Nigerian bitter leaves and water leaves).
° 1 ball of Onions

DIRECTION
1.chop all vegetables into small pieces and wash them with clean water, then set aside.
2.wash beef( it must have been cut into medium sizes) and place in a deep pot. add washed stock fish, washed dry fish, chopped onions, 1 seasoning cube 1/2tbsp of salt and water( not so much) into the pot. Close the lid of the pot and leave beef to boil for about 10 minutes.
3. After 10 minutes, take the pot down from the stove/cooker and pour the content of the pot into a bowl. Rinse the pot and place back on the stove /cooker.
4.Add red(palm) oil into the pot and leave to get very hot.
5. In another small bowl, soak grinded melon seeds with little water and leave to rise a bit.
6.Back to the pot containing palm oil.
By now the oil must have been very hot and a bit light, add the soaked melon seed mixture into the hot oil and stir with a metal spoon so it doesn't get burnt.
7.Still using the spoon, mix the oil and melon seed mixture together so they become incorporated.
8.Add the boiled beef content into the pot of oil and melon seed and stir, adding water bit by bit if the soup becomes too thick. Until the texture of the soup is not too thick and also not too light. Add remaining 1 tbsp of salt, powdered crayfish, pepper and 2 seasoning cubes. Close the pot and leave the soup to cook for another 10-15 minutes.
9.Finally, add washed vegetables into the soup, stir and leave to cook again for about 10 more minutes.
10. Take pot of soup down after 10 minutes and serve with any of the following swallows: eba, fufu, pounded yam, wheat........
