NiGERIAN CONCOCTION JOLLOF RICE RECIPE.
Concoction jollof rice is a traditional jollof rice prepared with basic ingredients found in the kitchen, that isn't normally used in the preparation of a classic African jollof rice.
INGREDIENTS
°2 Cups of rice
°10 fresh tomatoes
° 4 fresh Habanero pepper balls
° 1/2 tbsp black pepper( Cameroon pepper)
° 11/2 tbsp of salt.
° 2-4 seasoning cubes
°1/2 cup vegetable oil
° 1-2 balls of onions
° 1 or 2 smoked fish(kpanla)
° 1tbsp powdered crayfish.
° water.
SERVING: 5
TOTAL TIME: 50 minutes.
PREP: 20minutes.
COOKING:30 minutes.

DIRECTION
1.In a medium sized bowl, wash rice with warm water many times, until most of the starch in it are gone. Put washed rice in a deep cooking pot, add 3- 4 Cups of water into the pot and leave to boil for about 5 minutes.
2. Put chopped onions, chopped Habanero pepper balls,chopped tomatoes, smoked fish( kpanla), vegetable oil, crayfish, seasoning cubes, salt and black paper( Cameroon pepper) into the boiling rice. stir using a wooden spoon and leave to cook.
3. Check the rice after about 7 or 10 minutes, if the water in it is dried up and the texture of the rice is still hard, add a little water to it. But if otherwise, let the water in the rice dry up before taking it down drone the stove or cooker.
